Jessica Swanson, B.Sc. (University of New Brunswick), is one of the founding employees at Renaissance BioScience and currently holds the title of Lead Development Scientist & Beverage Unit Manager. Jessica and her team are responsible for beverage yeast development and application testing. She has a passion for craft beverages and collaborating with breweries, wineries and distilleries to evaluate new and novel yeast.
Yeast Hybrids with Renaissance BioScience
Renaissance BioScience will describe the technology behind creating novel yeast hybrids using modern non-GMO techniques. Throughout this session, the different characteristics that could be selected in the process (attenuation, esters, biotransformation, low sulfur, etc) in order to produce novel strains with interesting characteristics for the brewing industry will be discussed.
