Yeast Hybrids

Lallemand will describe the technology behind creating novel yeast hybrids using modern non-GMO techniques. Throughout this session,  the different characteristics that could be selected in the process (attenuation, esters, biotransformation, low sulfur, etc) in order to produce novel strains with interesting characteristics for the brewing industry will be discussed.
